How much of an impact does ping have?

I'm thinking of hopping onto one of the servers but most of them seem quite far. The ones I'm interested have a ping in the mid 200s. Is that functional or will I be losing clicks and rubberbanding around?

You will not lose any clicks and you will not have any rubberbanding. You will just feel a noticeable input lag on 200 ms ping. If you could play with it - that's ok.
Also if the connection is not stable (with a big network packet drop rate), sometimes the game may stall for a second to resynchronize the physics.

Thanks, turned out to not be an issue. there was a US server that just happened to be down the first time I looked.
